Cathie's Zucchini Loaf
I make this for my family each Christmas.
1 cup Flour
1 tsp Baking Powder
125g finely Grated Parmesan Cheese
1/2 Cup Canola oil
4 lightly beaten Eggs
3 trimmed and coarsley grated small Zucchini
1 finely chopped Onion
2 peeled and finely chopped Garlic cloves (optional)
Salt and pepper (optional)
Mixed herbs
~ Preheat oven to 180°C (fanbake).
~ Sift Flour and Baking powder into a bowl.
~ Combine the rest of the ingredients in with it.
Mix thoroughly.
~ Grease a loaf tin with butter, and dust with flour.
~ Scrape mixture into the tin and bake for 45 minutes at 180°C, until golden brown.
For muffins, bake for 20 - 25 minutes at 180°C.
