So this is our headcanon. One day Dean gave Shay an apple, and Shay made an apple pie for him in return. Dean became a demon on the crossroads, and Shay sold his soul for five year luck and power to deal with the Assassin Order. Time up, the hell hounds took Shay's life, then demon!Dean tortured him and turned him to be one of them.
