I came upon this in someone else's favorites. I don't know if you're still active or how much you've learned since drawing this, so if I end up mentioning things that you were already aware of, I hope it doesn't make my comment inherently useless.

This looks like a happy cow, but the unevenness of the fur makes me wonder if it's ill. The way the skin on the neck folds makes me think of certain types of rodents. The patchy aspects of the hair sort of create the impression that the areas that don't have ink lines might be bald, rather than having white hair. Even though the soft shading makes it look like the white areas are potentially covered in smooth, shiny fur, the black areas look very unkempt. I'm not familiar with the original reference, so I don't know if the shagginess is derived from there or if that's your own addition. The stylized anatomy with the skinny legs and neck combined with a bulky snout and body make me think of Asterix comics. I think the best parts of this are the mouth and nose region, the underbelly and the tail. The spontaneous tiny curl on top of the head is also a nice touch. The dense black shading on the right hind leg is also very pleasing to look at, even though the foot is left so sketchy that it obscures the separation between the grass and foot a bit.
